PURPOSE: A producing method of fried streusel bread having various texture is provided to remove butter from ingredients for producing streusel for securing the crunchiness after frying. CONSTITUTION: A producing method of fried streusel bread comprises the following steps: mixing 1,000 parts of strong flour by weight, 200-300 parts of sugar by weight, 10-20 parts of salt by weight, 140-160 parts of butter by weight, 20-30 parts of yeast by weight, 4-6 parts of leavening agent by weight, 180-220 parts of egg by weight, 180-220 parts of milk by weight, 140-160 parts of water by weight, and 140-160 parts of sourdough by weight to obtain dough; mixing 70-90 parts of almond by weight, 500-700 parts of weak flour by weight, 10-15 parts of baking powder by weight, 270-330 parts of sugar by weight, and 140-180 parts of egg by weight to obtain streusel; firstly fermenting the dough, and adding the streusel; and secondly fermenting the dough, and frying the dough. |
