PURPOSE: A producing method of a table containing melon and vitamins is provided to secure the unique flavor and nutrition of fresh melon, and to offer an high anti-oxidant effect of the melon to users. CONSTITUTION: A producing method of a table containing melon and vitamins comprises the following steps separating the skins from fresh melon, and cutting the flesh; grinding the skins of the melon, and mixing the skins with sugar; adding small amount of water to the mixture, and concentrating the mixture using an ultra filtration process to obtain a melon skin concentrate; hot-water extracting the melon flesh at 100-140 deg C for 1-5 hours; juicing and filtering the obtained melon flesh hot water extract, and vacuum-concentrating the obtained filtrate; mixing 0.1-0.5wt% of melon skin concentrate, 1-7wt% of melon flesh concentrate; 0.1-5wt% of vitamin C, 0.001-0.05wt% of thiamine, 0.001-0.05wt% of vitamin D3, 0.01-0.5wt% of vitamin E, 65-96wt% of glucoside, and 3-25 wt% of additives; and tabletizing the mixture. |
