PURPOSE: A producing method of salted Chinese cabbage and kimchi using medical herbs is provide to prevent the degeneration of decay of the salted Chinese cabbage. CONSTITUTION: A producing method of salted Chinese cabbage and kimchi using medical herbs comprises the following steps: mixing yellow soil water with salt at 35-37 deg C to obtain salt water having the salinity of 20-30%; dipping the lower part of Chinese cabbage leaves into the salt water for 4-6 hours, and dipping the whole Chinese cabbage into the yellow soil water for diluting the salinity to obtain the salted Chinese cabbage; drying more than one medical herb selected from the group consisting of persimmon leaves, green tea leaves, gingko leaves, grape leaves, and other ingredients; mixing the dried herbs with the yellow soil water, and boiling for 3-5 hours to obtain an extraction solution; mixing radish slices, ground garlic, red pepper powder, onion, ginger, spring onion, and fish sauce to obtain kimchi seasonings; producing the kimchi using the salted Chinese cabbage and the kimchi seasonings; and dipping the obtained kimchi into the extraction solution before aging for 5-7 hours and storing for more than 6 months. |
