A method for determining a color index of thermally treated condensed milk provides for diluting a sample of the product with distilled water, filtering through a membrane filter or a glass one, determining the optical density and content of dry substances. In the diluted sample of thermally treated condensed milk proteins is settled with a 3.98-4.02 % solution of calcium chloride by means of thermostatic control at a temperature of 75-85 °C for 10-15 min, after what the settled protein is separated by filtering. |
