PURPOSE: Functional kimchi using a medical herb extract, and a producing method thereof are provided to use a fruit extract instead of using sugar for producing the kimchi. CONSTITUTION: A producing method of functional kimchi using a medical herb extract comprises the following steps: extracting acorus gramineus, polygala tenuifolia, and poria cocos after mixing in a ratio of 1:1:3 for 2 hours; adding 2-50% of obtained medical herb extract into kimchi main ingredients for producing the kimchi. The kimchi uses a fruit extract of Japanese apricot, strawberry, kiwi, and pomegranate instead of sugar. |
