<P>PROBLEM TO BE SOLVED: To provide a cutting blade roll for noodle making which allows slitting of noodle strips with a good texture. <P>SOLUTION: The cutting blade roll 1 for noodle making includes a pair of cutting blade rolls 2 provided with a plurality of cutting blades 13 and 23 in roll shafts 11 and 21, and is designed to form noodle strip slitting grooves 50 between the pair of cutting blade rolls 2, and slit the noodle strips W from a noodle sheet V.
