PURPOSE: A producing method dried jujube slices, and the dried jujube slices are provided to minimize the loss of nutrients contained in fresh jujube, and to offer crunchy texture to eaters. CONSTITUTION: A producing method dried jujube slices comprises the following steps: pre-freeze drying jujube slices at -40-0 deg C for 1-5 hours, and drying the freeze-dried jujube slices for 50-70 hours by gradually increasing the temperature at -40-40 deg C; controlling the pressure applied to the dried jujube slices in 8-9 torr suing a vacuum pump, and maintaining the same pressure for 2-20 minutes; dehydrate-drying the jujube slices at 30-50 deg C for 10-30 minutes; and repeating the pressure controlling and dehydration processes for 1-3 days. |
