PURPOSE: A black garlic extract having the low calorie, and a producing method thereof are provided to age black garlic instead of hot-water extracting. CONSTITUTION: A producing method of a black garlic extract having the low calorie comprises the following steps: mixing 100 parts of peeled garlic by weight and 20-30 parts of lycium chinense by weight; ferment-aging peeled garlic mixture at 75-85 deg C for 350-370 hours in the humidity of 65-75% to obtain black garlic; adding 400-600 parts of water by weight to 100 parts of black garlic by weight, and aging the mixture at 75-85 deg C for 350-370 hours to obtain the black garlic extract; and packaging the black garlic extract.
