摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to food industry. The raw material is milled, water-soluble non-protein mucilaginous substances are removed by way of cake treatment with acidated water solution with pH = 3.5-4.0 at a ratio of 1:15 during 0.5-1 hours. The mucilaginous solution is separated from the cake. The cake is washed with water to remove mucilaginous remains. Rinse water is separated from the cake. One extracts protein from non-mucilaginous flax seeds cake with a 0.5-0.8 M sodium chloride solution in an alkaline medium with pH = 9-10 at a temperature of 20-40C during 1-3 hours. One separates the protein extract from the insoluble sediment. Protein is sedimented from the extract with an acid.
