A method for making concentrated fruit half-finished products provides for preparing raw material, grating, pulping, deaerating, flow sterilization, cooling, concentration of puree-like mass and aseptic prepacking. Grating and pulping are carried out simultaneously at a temperature of 18-22 °C for 10-15 sec., and concentration of the puree-like mass is carried out at 40-50 °C up to a content of dry soluble matters of 50-60 %. |
