METHOD FOR PRODUCING FUNCTIONAL SALTS USING CULTURED MYCELIUM OF LENTINULA EDODES

PURPOSE: A producing method of functional mushroom salt using a mycelial culture solution of lentinus edode is provided to offer the anti-oxidation function and anticancer function of the lentinus edode to bay salt. CONSTITUTION: A producing method of functional mushroom salt using a mycelial culture solution of lentinus edode comprises the following steps: injecting mycelial inoculum of the lentinus edodes into a sterilized PDB liquid medium, and culturing for 20-45 days at 25 deg C; collecting cultured mycelia from the medium, and grinding with an ultrasonic grinder; inserting the ground mycelia into the culture solution, and centrifugal separating and filtering to remove mycelia residues to obtain the pure culture solution; washing bay salt with water before dehydrating, and secondly dehydrating the salt for 3-5 minutes by centrifugal separating; baking the dehydrated salt at 90-95 deg C for 25-35 minutes; and crushing the salt into 50-100 meshes.
