A method for making meat snacks includes preparing the raw material, salting, mixing, washing thereof. Poultry meat is used as a raw material. While salting, sodium nitrite and a mixture of spices or flavouring compositions are added. Then it is held, washed with running water, predried, cut into pieces, slices or sticks, dried in drying chambers by convective forced heat exchange and cooled. |
