摘要 PURPOSE: A method for manufacturing a vegetable fermentation product using yeast is provided to enhance the original taste and flavor and to enhance uniform product quality. CONSTITUTION: A Saccharomyces cerevisiae M(S)-2-71(deposit number: KCCM11131P) is used as a starter strain for manufacturing a vegetable fermentation product. A method for manufacturing the vegetable fermentation product comprises: a step of mixing 70-150 weight parts of sucrose with 100 weight parts of pulverized edible plant of vegetables, fruits, nut fruits, mushrooms, wile plants, grains, or beans; a step of adding the Saccharomyces cerevisiae M(S)-2-71 or culture thereof in an initial concentration of 1x 10^6-1 x 10^8 CFU/g. The edible plant is kale.
