摘要 PURPOSE: A producing method of citron jam having improved storage quality is provided to use electrolyzed water for processing citron after a juicing process. CONSTITUTION: A producing method of citron jam comprises the following steps: juicing and removing seeds from fresh citron, and slicing the citron before processing with electrolyzed water; and storing the citron slices with sugar. The electrolyzed water is sodium hypochlorite water, and is contacted to the citron slices by a spraying method or a dipping method.
