<P>PROBLEM TO BE SOLVED: To provide bread crumbs for non-fry, for obtaining a non-fry-cooked product having the color tone closer to or the same as that of a fried food in eating when cooked other than frying. <P>SOLUTION: There provided bread crumbs for non-fry containing an anatto pigment and characterized in that 0-0.5 mass% of saccharide is blended in material wheat flour for bread crumbs; a method for producing the bread crumbs for non-fry using dough obtained by blending the anatto pigment to the material wheat flour for bread crumbs, blending 0-0.5 mass% of saccharide in the material wheat flour for bread crumbs and kneading it; and a method for producing a non-fry-cooked product using the bread crumbs. <P>COPYRIGHT: (C)2012,JPO&INPIT |
