<P>PROBLEM TO BE SOLVED: To provide an improving agent of noodle restoration or boiling time, which is used for manufacturing the noodles, attains hot water restoring or boiling of the noodles in short time even if the noodles are thick, and which gives sufficient food texture to the noodles, and to provide the noodles which are manufactured by using the improving agent of noodle restoration or boiling time and have sufficient hot water restoration or boiling time and superior food texture and a method of manufacturing the noodles. <P>SOLUTION: The improving agent of the noodle restoration or boiling time, in which acetylated oxidized starch is set to be an active ingredient, the method of manufacturing the noodles using the improving agent of the noodle restoration or boiling time and the noodles which are manufactured by the method of manufacturing the noodles and have the sufficient hot water restoration or boiling time and superior food texture are provided. The improving agent of the noodle restoration or boiling time, in which the acetylated oxidized starch is set to be the active ingredient, is blended with material powder in manufacturing of the noodles.
