<P>PROBLEM TO BE SOLVED: To provide a coating material for fried food, formable of coating that is excellent in crispness, good in clear-cut tendency with the teeth, and slight in oiliness. <P>SOLUTION: The coating material for fried food is provided, which is prepared by incorporating, as raw materials for the coating material, wheat flour (A), an oxidized starch (B) 0.1-1.1% in carboxy group content, and a swelling-suppressed starch (C) 3-40% in heat solubility, in such a way that the mass ratio of the wheat flour (A) to the oxidized starch (B) plus the swelling-suppressed starch (C) is 10:90 to 60:40 and the mass ratio of the oxidized starch (B) to the swelling-suppressed starch (C) is 15:85 to 35:65. <P>COPYRIGHT: (C)2012,JPO&INPIT |
