<P>PROBLEM TO BE SOLVED: To provide jelly that can be produced only by cooling after heat dissolution, exhibits variable kinds of mouthfeel, does not melt even during heat sterilization at neutral pH at 121°C for about 20 min and shows good shape retention, and also to provide a method of producing the same. <P>SOLUTION: The method includes heat-dissolving in water or hot water sodium alginate, a hardly soluble calcium salt, a chelating agent and a gelling agent with heating/cooling gelation properties, and then cooling the resultant material to obtain a gel having both sodium alginate gel that is a calcium reactive gelling agent and a gel with heating/cooling gelation properties. <P>COPYRIGHT: (C)2012,JPO&INPIT |
