<P>PROBLEM TO BE SOLVED: To provide a method for producing a sheet-shaped boiled brown rice or a sheet-shaped boiled rice and barley, by which the production of the sheet-shaped boiled brown rice or the sheet-shaped boiled rice and barley can be produced, by which the obtained molded rice can acquire wide applications similar to those of a sheet-shaped boiled rice, and which provides the sheet-shaped boiled brown rice or the sheet-shaped boiled rice and barley, hardly being hardened even after being cooled, becoming easy to eat without causing dry and crumbling state, and being eatable readily. <P>SOLUTION: Just cooked boiled brown rice or boiled rice and barley is fed to a noodle-making machine 4 and extruded from many fine nozzles for noodle strips to form the rice granules into uneven sizes. The resultant rice granules are formed into a sheet shape by being extended to a prescribed thickness, and shaped to a prescribed size to form a shaped boiled rice 1. The shaped boiled rice 1 is packaged.
