A cinnamyl alcohol dehydrogenase (CAD) from the Lolium species encoded by the nucleotide Sequence ID Nos: 25, 27, 29-33 or 45. In particular, the CAD sequence is from L. perenne or L. arundinaceum. The nucleotides and polypeptides encoded by the nucleotides can be used to transform plants and plant cells and also used for the modification of cellulose or lignin in a plant.
