<P>PROBLEM TO BE SOLVED: To provide a method for relatively easily producing noodles having a predetermined cross-sectional shape and texture characteristic of hand-extended noodles. <P>SOLUTION: The method for producing noodles having at least one recess in a cross-sectional shape is a method for producing noodles in which cross-sectional shapes have each at least one recess and includes (1) the step for obtaining a long material having at least one recess in a cross-sectional shape by forming a raw material containing wheat flour and (2) the step for pulling one end and the other end of the long material in the longer direction. <P>COPYRIGHT: (C)2012,JPO&INPIT |
