Continuously producing a variety of spoonable and pourable sauces, comprises: providing the continuous aqueous phase in a circular line (4) formed as loop; adding an oily, disperse phase in step-wise manner in the circular line formed as loop with continuous recirculation using a pump (5) for producing a stable initial emulsion; preparing the emulsion with initial emulsion and additionally adding oily, disperse phase; maintaining the concentrations in the circular line by continuous addition of oily, disperse phase to aqueous phase; and removing the emulsified, spoonable or pourable sauce. Continuously producing a variety of spoonable and pourable sauces, comprises: providing the continuous aqueous phase in a circular line (4) formed as loop, which has at least two static mixing elements with different hydraulic diameters; adding an oily, disperse phase in step-wise manner in the circular line formed as loop with continuous recirculation using a pump (5) for producing a stable initial emulsion; preparing the emulsion with initial emulsion by mixing and emulsifying with static mixing elements in the circular line with continuous recirculation using the pump and additionally adding oily, disperse phase in step-wise manner and aggregates until a desired quantitative ratio is obtained; maintaining the concentrations in the circular line by continuous addition of oily, disperse phase to the aqueous phase and the aggregates in the desired quantitative ratio; and removing the emulsified, spoonable or pourable sauce from an outlet (9) of circular line during the production in the desired quantitative ratio. |
