摘要 <P>PROBLEM TO BE SOLVED: To provide an additive for cooking rice which can be dispersed to the whole cooking rice by adding when cooking raw rice, and is excellent in loosening property, texture and flavor. <P>SOLUTION: The additive for cooking rice includes: (a) 92 to 99 mass% of edible oil; (b) 0.5 to 2 mass% of polyglyceryl fatty acid ester; (c) 0.1 to 5 mass% of glycerin organic acid fatty acid ester; and (d) 0.01 to 1 mass% of phosphatide composition, wherein the mass ratio of nitrogen non-containing phospholipid with respect to nitrogen containing phospholipid is not less than 5. <P>COPYRIGHT: (C)2012,JPO&INPIT
