<P>PROBLEM TO BE SOLVED: To provide a method for easily and quickly producing a composition containing GABA at a high concentration. <P>SOLUTION: The method for producing a composition having high γ-aminobutyric acid content comprises the inoculation of a microbial strain having γ-aminobutyric acid productivity, preferably a lactic acid bacterial strain, more preferably a lactic acid bacterial strain belonging to the genus Lactobacillus, and most preferably Lactobacillus brevis UAS-4 (FERM-P20710) or Lactobacillus brevis UAS-6 (FERM-P20711) in a medium containing a composition derived from asparagus, and the separation of GABA from the culture product. <P>COPYRIGHT: (C)2008,JPO&INPIT |
