The invention relates to dairy industry and can be use in making thermal-acid cheeses. A method of making a thermal-acid cheese includes high-temperature treatment of a normalized milk mixture followed by cooling, adding a reagent, forming a thermal-acid curd, self-pressing thereof, salting, fermenting. According to the method, the high-temperature treatment of the normalized milk mixture is carried out at a temperature of 120±5 °C with exposure of 1-3 seconds, addition of coagulating whey, which is the reagent, is carried out under vacuum, and the thermal-acid curd is fermented at a temperature of 14-18 °C in the course of more than 18 hours in the milk whey by lactic acid bacteria of the L. acidophilus species. |
