<P>PROBLEM TO BE SOLVED: To provide technique for speedily heating oil up to heat-retaining temperature after starting the heating adaptively to a plurality of kinds of pans when cooking fries, the technique being achieved by speedily raising the temperature of the oil up to the heat-retaining temperature by means of control in consideration of a temperature rise of the oil behind a temperature rise of the pan by carrying out the heating (what is called overshoot heating) until a temperature detection sensor detects temperature exceeding the heat-retaining temperature after the heating is started. <P>SOLUTION: The temperature of the oil is speedily raised up to the predetermined heat-retaining temperature by performing the overshoot heating in accordance with a rate of the overshoot heating determined according to the kind of each pan and the amount of oil in the pan during a heating period from when the pan beings to be heated to when the oil in the pan reaches the heat-retaining temperature. <P>COPYRIGHT: (C)2012,JPO&INPIT |
