The process comprises depositing (31) a carbon substrate layer comprising agricultural residues and/or agrofood residues of constant thickness on a part of a fermentation tank, enriching (32) the layer by uniformly spraying (321) a predetermined quantity of draining material on a surface of the layer and by sampling (322) a portion of the non absorbed draining materials by the layer at the bottom of the tank, and allowing (323) the mixture for partial transformation by aerobic fermentation. The quantity of draining material enters through layer by percolation to form a fermentable mixture. The spraying step is controlled by programmable automation. An independent claim is included for a station for treating draining material collected in an installation and/or non collective sewerage network.
