<P>PROBLEM TO BE SOLVED: To provide a treating agent and a treating method for frozen roe which is capable of suppressing a decrease in yield, decrease in elasticity, and deterioration in color tone occurring when frozen roe is thawed and capable of improving the preservation property of the roe after thawing. <P>SOLUTION: The frozen roe treating agent and frozen roe treating aqueous solution contain trisodium citrate and disodium dihydrogen pyrophosphate. The treating method for frozen roe includes immersing the frozen roe in the frozen roe treating aqueous solution containing 0.05-1.5 wt.% of trisodium citrate and 0.02-1.5 wt.% of disodium dihydrogen pyrophosphate, and having a pH of 5.0-6.8. <P>COPYRIGHT: (C)2012,JPO&INPIT |
