摘要 PURPOSE: A method for producing sialidase using Pseudomonas fluorescens JK-0412 is provided to ensure anti-viral, anticancer, and diabetic activities. CONSTITUTION: A sialidase contains N-terminal amino acid sequence of sequence number 4. The peptide specifically hydrolyzes alpha-2,8-linked polysialic acid. The peptide is derived from Pseudomonas fluoescens JK-0412(deposit number KCTC 11623BP). The peptide is prepared by culturing the Pseudomonas fluoescens JK-0412 under the presence of chitin as a carbon source. The peptide is contained in a supernatant of culture liquid of Pseudomonas fluoescens JK-0412. The Pseudomonas fluoescens JK-0412 is cultured at 25-50 °C and pH 4-10.
