摘要 FIELD: food industry. ^ SUBSTANCE: inventions relate to confectionary industry. The method envisages preparation of formula components, cutting of girasol, its drying in microwave field at specified parameters of the process, additional drying by convective method and cryo-grinding in liquid nitrogen to produce flour. Then dough is made of high-grade wheat flour, girasol flour, yolks, salt, soda, vegetable oil, phospholipids and water. Dough is shaped in the form of sheets and baked. Tangerine rind is extracted by liquid nitrogen to separate according miscella. Scorzonera or oyster plant or dandelion roots are cut, dried in the microwave field at preset process parameters, roasted, impregnated by separated miscella with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of raw materials and its cryomilling in medium of released nitrogen to produce flour. Flour is mixed with culinary fat, sugar substitute "Sladex" and waffle crumb to make filling.
