摘要 Disclosed is an emulsifying system comprising a 2-propylene glycol monoester of a fatty acid (2-PGME) and a 1-propylene glycol monoester of a fatty acid (1-PGME), wherein the emulsifying system further comprises monoglycerides and diglycerides and wherein the ratio by weight between the monoglyceride and the diglyceride is at most 50:50. Also disclosed are frozen food products comprising said emulsifying system.
