PURPOSE: An operation side plate covering device of a chilled meat slicer is provided to secure cutting safety of chilled meat and to improve cutting quality. CONSTITUTION: An operation side plate covering device of a chilled meat slicer comprises: a feeder reciprocating between a safety plate and a round cutting blade; a fixed side plate(50) for pressing one side of chilled meat loaded on the conveyer belt of the lower feed port of the feeder; and an operation side plate(54) which is equipped with an upper pressing part and a movement space part is formed.
