<P>PROBLEM TO BE SOLVED: To provide a high-density blockish lyophilized food good in block shape and reconstitution tendency when to be eaten, and to provide a method for producing the same. <P>SOLUTION: The blockish lyophilized food of such a type as to be eaten after being reconstituted into an aqueous edible liquid, is provided, which is produced by the following process: a cooked liquid adjusted so as to contain 9-90 mass%, on the whole solid basis, of di- to octa-saccharides 80°C or higher in glass transition temperature and contain 40-78 mass% of water is lyophilized to effect containing 9-90 mass%, on the whole solid basis, of the saccharides and being 0.23-0.72 g/cm<SP POS="POST">3</SP>in density. <P>COPYRIGHT: (C)2012,JPO&INPIT |
