Disclosed are a reducing agent effective against coloring of meat and an application for same. Specifically disclosed is a reducing agent that includes a heme reductase from a microorganism belonging to genus Bacillus. Ideally, disrupted cells of B. subtilis, B. amyloliquefaciens, B . subtilis natto, B. thuringiensis, or B . licheniformis are used.
