摘要 PURPOSE: A producing method of kimchi for teenagers and children is provided to use paprika instead of spicy pepper and red pepper powder for reducing the spicy taste of the kimchi. CONSTITUTION: A producing method of kimchi for teenagers and children comprises the following steps: salting Chinese cabbage, and washing and dehydrating to obtain salted Chinese cabbage; and mixing the salted Chinese cabbage with seasonings. The seasonings include 18-22wt% of paprika, 5-5.8wt% of radish, 1.3-1.7wt% of oenanthe javanica, 2.5-2.8wt% of small green onion, 1-1.1wt% of garlic, 0.4-0.6wt% of ginger, 1.7-1.9wt% of salted seafood, 1.2-1.3wt% of glutinous rice gruel, 0.7-1.1wt% of sea tangle extract, and 0.1-0.5wt% of anchovy powder.
