PURPOSE: A producing method of a fermented root vegetable product containing saponin using kimchi lactic acid bacteria is provided to offer the excellent pharmacological activity of the saponin to users. CONSTITUTION: A producing method of a fermented root vegetable product containing saponin comprises the following steps: washing root vegetables containing the saponin, and steaming the root vegetables; crushing the steamed root vegetables; mixing 70-95wt% of crushed root vegetables with 5-30wt% of edible pollen; injecting kimchi lactic acid bacteria selected from lactobacillus strains, leuconostoc strains, or weissella strains into the mixture for fermenting; and drying the fermented product. |
