<P>PROBLEM TO BE SOLVED: To provide a cyclodextran synthase capable of producing not only CI-7, CI-8 and CI-9 which are cyclic isomalto-oligosaccharides, but also CI-10 and cylodextrans having higher molecular weights than that of the same. <P>SOLUTION: This DNA having a restriction enzyme cleavage map described in the expression (1) [wherein, H is HindIII; E is EcoRI; N is NdeI; and P is PstI] and containing an alkaliphilic cyclodextran synthase (molecular weight 107kd) gene, the DNA encoding the alkaliphilic cyclodextran synthase having an amino acid sequence described in sequence number 1 of the sequence listing and the DNA encoded by a base sequence described in the sequence number 2 of the sequence listing are also provided. <P>COPYRIGHT: (C)2007,JPO&INPIT |
