PURPOSE: A producing method of a fermented ginseng extract, and a composition containing thereof are provided improve the content of saponin in the extract by aging and heat processing. CONSTITUTION: A producing method of a fermented ginseng extract comprises the following steps: extracting fresh ginseng; mix-cultivating three different kinds of strains in the ginseng extract for fermenting; destroying microbial cells inside the fermented ginseng extract using a high pressure emulsifier; aging the fermented ginseng extract for 1-2 days at 30-45 deg C: heat-processing the aged fermented ginseng extract for 20-40 minutes at 110-125 deg C; and filtering, concentrating, and drying the heat-processed fermented ginseng extract to obtain powder.
