PURPOSE: A producing method of a natural preservative for walnut cake is provided to minimize the generation of side effects caused by a synthetic preservative. CONSTITUTION: A producing method of a natural preservative for walnut cake comprises the following steps: extracting 5-20wt% of scallion and 10-30wt% of dock leaves with 50-85wt% of mixed solution of ethanol and water by heating the mixture at 50-70 deg C for 4-8 hours; and filtering before concentrating the extract at 30-50 deg C.
