摘要 <P>PROBLEM TO BE SOLVED: To provide high-taste low-alcohol drink with long term stable taste in which good taste is adjusted and stability and acidity provision are compatibly attained high sweet sweetener such as acesulfame potassium for preserving the taste in the long term storage in the low alcohol drink using highly sweet sweetener such as the acesulfame-potassium in order to lower calorie. <P>SOLUTION: In the manufacturing of the low alcohol drink containing the highly sweet sweetener or the acesulfame potassium, the high taste low alcohol drink is manufactured in which the stability and acidity of the acesulfame potassium are compatibly attained by adjusting citric acid and malic acid such that the total amount of the acids becomes 0.3 w/v% or less based on the total drink while maintaining pH of the alcohol drink 3.0 or more. Here, the amount of the citric acid and the malic acid is selected in such a range that the additive amount of the citric acid is 0.15 w/v% or less based on the total drink and the additive amount of the malic acid is 0.15 w/v% or less based on the total drink. <P>COPYRIGHT: (C)2012,JPO&INPIT
