摘要 <P>PROBLEM TO BE SOLVED: To provide starch having a good flavor and used for seasoning. <P>SOLUTION: There is provided the starch for the seasoning, prepared by adding a mineral acid such as concentrated sulfuric acid to a starch raw material-dispersed starch slurry to treat the starch with the mineral acid, and adjusted to a viscosity of 13 to 550 mPa s in a concentration of 20 mass% at a temperature of 70&deg;C and at a rotation speed of 60 rpm. The starch for seasoning not only has a good flavor but can also be pulverized by an ordinary drying method such as a spray drying method, and can widely be used as starch for seasoning. <P>COPYRIGHT: (C)2012,JPO&INPIT
