α-GLUCOSIDASE, METHOD FOR PRODUCING THE SAME AND USE OF THE SAME

PROBLEM TO BE SOLVED: To provide an α-glucosidase useful for producing isomaltose and a method for producing the isomaltose by using the enzyme.

SOLUTION: This α-glucosidase having the following substrate specificities and the method for producing the same, a DNA encoding the enzyme, and a recombinant DNA and a transformant containing the same, the method for producing the isomaltose by utilizing the enzyme are provided. The substrate specificities includes: (1) by acting on maltooligosaccharide, producing glucose by hydrolysis reaction; (2) by acting on maltose, producing maltotriose together with the isomaltose by glycosyl rearrangement reaction; and (3) not producing panose and isomaltotriose from the maltose.
