MANUFACTURING METHOD FOR ENZYME TREATMENT OF GINSENG AND MANUFACTURING METHOD FOR FERMENTED GINSENG USING THE SAME

PURPOSE: A method for preparing enzyme-treated materials is provided to effectively isolate oligosaccharides from ginseng under an optimal condition. CONSTITUTION: A method for preparing enzyme-treated material of ginseng comprises: a step of mixing 0.5-2.0%(w/w) of polysaccharides lyase containing pulverized leaves, stems, or roots of ginseng and performing enzyme reaction for 2-3 hours; and a step of centrifuging enzyme reactant to prepare supernatant. The diameter of the pulverized material is less than 0.15 mm. The total saccharide of the supernatant is more than 70%.
