<P>PROBLEM TO BE SOLVED: To provide pickles which have flavor similar to that of "lightly-pickled vegetable" while using freezing technique: and to provide a method for producing the pickles. <P>SOLUTION: The method for producing pickles comprises: liquefying frozen seasoning M6X in a sub-zero temperature range not getting to a zero point or above (≥0°C) when thawing frozen vegetable M5X refrigerated in a cold storage part 20 together with seasoning liquid M6, to make liquefied seasoning liquid M6 infiltrate into frozen water at the surface of frozen vegetable M5Y, so as to produce completed pickles M6 containing the internal water and the internal components without flowing out to the outside part from destructed tissues of the vegetable. <P>COPYRIGHT: (C)2012,JPO&INPIT |
