摘要 The present invention relates to a method for desalinating salted and fermented foods using ethyl alcohol, and more particularly, to a method which involves adding a predetermined amount of ethyl alcohol to the salted and fermented foods to reduce the solubility of salts and precipitate salts, removing the thus-reduced salts in a physical manner, and then removing the ethyl alcohol using a low-temperature vacuum evaporator.
