PURPOSE: Chiffon cake including mulberry powder, and a producing method thereof are provided to improve the physical property and functionality of the cake using the mulberry powder. CONSTITUTION: A producing method of chiffon cake including mulberry powder comprises the following steps: mixing 90-110 parts of egg yolks by weight, 120-140 parts of sugar by weight, 1-3 parts of salt by weight, 70-90 parts of cooking oil by weight, 180-210 parts of flour by weight, and 3-7 parts of baking powder; adding a solution obtained by mixing the mulberry powder and water into the mixture; stirring egg whites, and adding the sugar to obtain meringue; inserting the meringue into the mixture; pouring the obtained dough into a frame; and baking the dough in a pre-heated oven for 20-40 minutes. |
