PURPOSE: Yellowish red aged garlic and a producing method thereof are provided to reduce the unique smell of garlic and to maximize the storage stability of the garlic. CONSTITUTION: A producing method of yellowish red aged garlic comprises the following steps: hanging fresh garlic, without peeling the garlic, on a drying rack for more than 3 months at a highland area for aging; and repeating natural freezing and natural thawing processes until the color of the garlic changes to yellowish red. The highland area has a height of 800m above sea level. |
