Disclosed is a method for inducing artificial hibernation of fish, characterized in that: maintaining a fish in sea water for a predetermined period of time; gradually decreasing the sea water temperature according to each predetermined section and then gradually increasing the time of maintaining the sea water temperature constant at each step of decreased temperature according to each decreasing phase; and thereafter gradually decreasing the time of maintaining the sea water temperature constant at each step of decreased temperature according to each determined decreasing phase, starting from a point of sea water temperature where there is no deviation of mean oxygen consumption consumed by the fish at a constant temperature. Also disclosed is an apparatus when used with the said method.
