<P>PROBLEM TO BE SOLVED: To provide a preparation method of solid fish/meat food for a person with difficulty in mastication, which is of such hardness that the person with difficulty in mastication can easily eat, rarely gets loose and can offer a pleasure of visually enjoying meal as it keeps an original appearance of a material unlike conventional pasted or minced food. <P>SOLUTION: Fish or meat of a shape such as a slice that an able-bodied person usually takes is first soaked in a solution of salt, then it is washed with water, an aqueous solution containing protease added is directly injected/scattered in the fish/meat, and then the protease is deactivated by heating. <P>COPYRIGHT: (C)2008,JPO&INPIT |
