The tenderizer has a transmitter-receiver part carried by a frame (16) of blocks (12) of slits (11) to trigger unidirectional blocking of a cross-piece (25) on columns (5, 6) before mechanical triggering of blocking of another cross-piece (19) on the columns under reaction effect of a meat piece (3) to reduce pressure exerted on the meat piece before penetrating tenderizing knives (10'') in meat side. The unidirectional blocking of the former crosspiece is carried out by supporting posts (17, 18) on the latter cross-piece until releasing of the latter cross-piece by an unblocking stop (23).
